How i make the most of my roasted chicken.

As you all know by now I'm someone who loves to reduce waste and use everything i can, So naturally i find a way to use every part of a beautiful roasted chicken. In today's article ill be giving the recipe for making a creamy chicken and mushroom pasta , Chicken breasts with cheese and potato bake and also how i make a simple chicken stock with the bones of the chicken too , so lets get into this!

First you are going to need your roasted chicken , i tend to leave it cool and then completely dismantle it. I cut off both breasts and set aside for use that day and then i start to pull all remaining meat off of the body, legs and wings of the chicken , set that aside in a bowl ready for the next day and then finally the bones and any left over scraps i don't want will all be put into my large stew pot ready to make a simple chicken stock to freeze for later use.

Chicken breast with Cheese and potato bake:

Ingredients:

*Double cream *Grated Cheese *Salt and Pepper

*Potatoes *Chives

Start by slicing the potatoes into discs and then part boil them. Next carefully start layering the potato into a baking dish and sit to the side whilst you make the sauce. In a saucepan mix together double cream , cheese and chopped chives , mix on a lower temperature just to melt the cheese into the cream. Once combined pour the mixture into the baking dish covering all the potatoes, then top the dish with a thick layer of grated cheese and bake in the oven till golden brown on top. Once cooked serve this with your roasted chicken breast , a sprinkle of fresh cut chives across the top works a treat too.

Creamy chicken and mushroom pasta:

Ingredients:

*Cream Cheese *Grated Cheese *Milk

*Chicken Scraps *Mushrooms *Onion

*Garlic *Pasta or Spaghetti

Start this dish off by dicing your onion , garlic and mushrooms and fry them in a large pan or wok. Once they are at the texture you want add your chicken in and then lower the heat onto a medium low and add your cream cheese and splashes of milk at a time whilst stirring gently , get yourself a more liquid consistency to start with as when you add the grated cheese into this it will thicken back up. Once you've mixed your cheese into it and you've left it to simmer for 5 minutes, turn the heat off and let the flavours soak through everything whilst you start on your pasta. we all know how to make pasta , boil it till its soft and then drain well. Once pasta is cooked and drained , add it into the creamy mushroom mix and put on a low heat to warm the sauce back up and combine it all together. When ready to serve you can add garlic bread as a side to this simple dish.

Simple Chicken Stock:

Ingredients:

*Chicken bones *onion

*Garlic *Seasoning

This one is nice and easy , I take the peel off of the garlic and onions and add them practically whole (cutting onions in half) into the big stew pot with my chicken bones and scraps, next i season well with salt, pepper and mixed herbs but you can use what ever herbs you'd like. next i cover well over with boiling water and leave this to simmer for at least an hour ,Then i turn off the heat and leave to cool.I then drain all the liquid into a big bowl before putting into ice cube trays and freezing into cubes for later use. you can store the freshly made stock in the fridge for up to 5 days or freeze it for up to 6 months.

All of these dishes are packed full of great ingredients for keeping yourself healthy especially Garlic and the herbs , there is lots of other recipes you can make with a roasted chicken but these are two of my go to favourites! I really hope you like my recipes , i don't add measurements or times as everyone needs different portion sizes and every one's oven/ hobs are different and have different cooking times so i just give you the rough idea on how to make them.
