Perfect Porridge - Microwave Style
There are many distinctive tastes that trigger memories of Scotland. For many it will be Scotch whiskey, with each individual malt evoking a specific Highland stream or Scottish isle. For others, with a yearning for the outdoors and campfire cooking, there is the rich, smoky piece of heaven that is the kipper: ideally for breakfast on toast, crowned with a poached egg. Or maybe, for those with a sweet tooth, a box of shortbread biscuits or even a slab of 'tablet'.

One of the absolutely best parts of traveling, is newfound food! There is always something novel to try—especially when you travel outside of your country of origin. I’ve eaten green beans all my life, but growing up in the USA, it was always in just two boring ways: 1) Boiled with bacon, to flavor them; or 2) Slathered with mushroom soup, cheese, and dried onions in a green been casserole. It was only after I first moved to Australia (as an expatriate for a while), that during supper at the home of some hospitable mates (friends), they excited my taste buds with green beans as I had never before experienced them! Thus, I call this dish: “Australian Green Beans” (even though I suspect it probably originated somewhere in Africa). Who knew green beans could be so exciting? It’s an easy dish to make, too.

In the past few days, the vegetable market at the gate of the community is really lively, and it is overcrowded all day long. Many seasonal vegetables are on the market, including my favorite corn! Some time ago, it was still 5 for 10 yuan, and today I bought 7 for 10 yuan, all of which are fresh, and with a light pinch, the juice is running wild!

Microgreens
I've been working in health care for around 30 years. First as a Medical Assitant and then as an RN. As much as I enjoy helping people and being a part of their healing, I have to say and say it out loud, I am over it! Dont get me wrong. I really do love helping people and I really do want people to be well, but the responsibility of dealing with other's life and death issues and the persistent emotional tugging knowing I must remain impartial and strong for this or that person have topped me off emotionally and mentally, I am done. I want to enjoy helping people but not in this capacity.
