Benefits of Mycelium
Have you been getting your recommended servings of vegetables and fruit everyday? How about drinking plenty of water? If you have, then thumbs up, but there may be something else you want to add to your list of "Things I Need to Eat Today": fungus. For now we will just call them mushrooms because it sounds a bit more pleasing. Many people find mushrooms to be odd tasting with a strange texture, but if you take the time to try the different varieties you will find that there is something out there for everyone. Chanterelles are a bright golden color and have a fruity and peppery taste, and go quite well with eggs because of their delicate texture. They also last the longest in the fridge compared to other mushrooms because of their high water content and should be sautéed dry.

While people will argue whether red meat, grains, fruit, dairy, and a multitude of other foods should be removed with prejudice from your diet, most diets agree that vegetables are good for you and that you should eat more of them. The Health & Environmental Benefits of Mushrooms
The Old Wise Man’s Knowledge Mycologist Paul Stamets has been doing research on thousands of mushroom species with hundreds of thousands more waiting to be discovered by the likes of him or people with similar interests. Paul simply does what he loves in nature by searching for the endangered Fungi species known as Agarikon and the network of white threads or roots called Mycelium or mushroom spawn. Paul believes that both the human population and Mother Earth could benefit from the existence of mushrooms which could one day save the world. From fulfilling our macro-nutrient needs to increasing our immune system in order to fight off viruses & diseases. (Stamets, 2009 & 2012) Some mushrooms, however, are now under clinical trials due to their mind altering effects which has the potential to cure a number of mental health disorders such as depression, addiction, and anxiety with many more results soon to come. And as long as there are organizations who are allowed to study any psychedelics with medicinal uses, then it could very possibly be that they have been part of our evolution for thousands of years. 3 Dairy Alternatives
Hello my lovelies! This isn't exactly a meal prep recipe but I wanted to write for those like me who are lactose intolerant who love dairy but don't want to eat dairy every time we're craving cheese or ice cream. This is also for those ones who aren't lactose intolerant but don't want to feel bloated all the time after they eat a bowl of ice cream or a thick rich milkshake. When I went vegan for two weeks last year I found some great alternatives to dairy when I was making creamy sauces and stuff like that.
