Gluten Free Summer
When I think of Summer there are so many things that pop into my head. Warm, toasty sunrays hitting fair, freckled skin. The sound of laughter and splashing coming from the pool. Waves gently crashing against the golden sand. The drip of that single drop of perspiration sliding off an ice cold beverage cup. And yes, the scrape, rustle and cheerful chatter of people having their picnics and barbeques. It's such a joyous and bright time of year I don't always think of food right away and yet there it is, inherent in everything. The item all our social gatherings revolve around. An item that in fact many take for granted, but for those of us who are medically gluten free it's not always so easy.

Ugly Blinis
I was making the blinis (Russian version of crepes) the other day and remembered how my great aunt used to make them. Baba Lyuba, as we called her lovingly, was my maternal mother's older sister and they lived across the road from each other in our "ancestrial village" in the north of Kyrgyzstan. They were "Irish twins," only 18 months apart, and when I became aware of myself, baba Lyuba was already a "pensioner." Women retired at 55 at that time in the Soviet Union, and my grandma, who was born in 1924, retired at 50 as a mother of 5 children (mother-heroines they were called). So, for as long as I remember myself, they both were retired, and just living their lives off the land and their small pensions (social security payments). Simple, heavenly life.

Meals Ready to Eat, or MRE, is a total self-contained complete meal that withstands rough conditions and exposure to the elements. They are the primary main operational food ration for the US Military. Each MRE contains on average 1,250 calories, 13% protein, 36% fat, 51% of carbohydrates, and a third of the average adult’s daily recommended allotment of vitamins and minerals. Someone can safely consume everything inside of it cold, but they contain a flameless ration heater that can warm it up, making them taste better. To make an MRE at home, you’ll need a vacuum sealer, permanent marker, food-grade Mylar bags both large and small, and food to put in it.
